Prepare the Yogurt Mixture: In a large mixing bowl, combine the plain Greek yogurt, honey (or maple syrup), lemon zest, fresh lemon juice, and vanilla extract. Stir the mixture until it becomes smooth and all ingredients are well blended.

    Incorporate Almond Flour: Gradually mix the almond flour into the yogurt mixture. Stir thoroughly until the mixture thickens and can hold its shape. If the mixture feels overly sticky, sprinkle in an extra tablespoon or two of almond flour until it reaches a manageable consistency.

      Form the Truffles: With clean hands, take small amounts of the mixture (approximately 1 tablespoon each) and roll them into round balls. Arrange the formed truffles on a baking tray lined with parchment paper for easy removal.

        Coat the Truffles: Roll each truffle in the finely chopped almonds to ensure they are evenly coated. Once coated, place the truffles back on the parchment-lined tray.
