Ingredients

2 cups Greek yogurt (plain or vanilla)

1 cup fresh figs, chopped (approximately 8-10 figs)

1/4 cup honey (plus extra for drizzling)

1/2 teaspoon vanilla extract

1/4 cup almond flour (optional, for added texture)

1/4 teaspoon sea salt

2 tablespoons fresh lemon juice

1/4 cup chopped nuts (walnuts or pistachios, optional)

Fresh mint leaves for garnish (optional)

Instructions

Prep the Figs: Begin by thoroughly washing the fresh figs. Chop them into small bite-sized pieces. Reserve a few slices for garnishing the finished bars, if desired.

Combine Yogurt Mixture: In a spacious mixing bowl, add the Greek yogurt, honey, vanilla extract, lemon juice, and sea salt. Whisk these ingredients together until you achieve a smooth and well-combined mixture.

Add Fig and Nuts: Carefully fold in the chopped figs along with the almond flour (if using) into the yogurt mixture. If you decided to incorporate nuts, add the chopped walnuts or pistachios at this stage and gently mix until everything is evenly integrated.

Prepare the Pan: Take a 9x5 inch loaf pan and line it with parchment paper. Ensure the parchment paper extends over the edges for easy removal of the frozen bars later.

Pour and Spread: Pour the yogurt and fig mixture into the prepared loaf pan. Use a spatula to spread it out evenly, ensuring an even layer across the pan.

Freeze: Cover the top of the pan with plastic wrap to prevent freezer odors from impacting your dessert. Transfer the pan to the freezer and let it freeze for a minimum of 4 hours, or until the mixture is completely firm.

Cut into Bars: Once the yogurt has set and is frozen, remove it from the pan by lifting it out using the parchment paper overhang. Place the frozen yogurt block onto a cutting board and slice it into bars of your preferred size.

Serve: Drizzle additional honey on top of the bars for added sweetness. Garnish with the reserved fig slices and fresh mint leaves for a vibrant finish. Enjoy these refreshing and fruity bars immediately, or place them back in the freezer for later enjoyment.
