Ingredients

2 cups plain Greek yogurt

1/2 cup honey or maple syrup

1 teaspoon vanilla extract

1 cup fresh or frozen blackberries

2 tablespoons lemon juice

1 teaspoon cornstarch

1/4 cup water

Pinch of salt

Instructions

Prepare the Yogurt Layer:

    - In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Use a whisk or spoon to stir this mixture until it is smooth and thoroughly blended.

      Make the Blackberry Swirl:

        - In a medium saucepan, combine the blackberries, lemon juice, water, cornstarch, and a pinch of salt.

          - Cook the mixture over medium heat, using a fork or potato masher to lightly mash the blackberries as they heat, until they break down and form a thicker syrup, about 5-7 minutes.

            - Remove the saucepan from heat and let the blackberry mixture cool slightly while you proceed to the next step.

              Assemble the Mixture:

                - Line an 8x8-inch square baking dish with parchment paper, ensuring there is some overhang on all sides for easy removal later.

                  - Pour half of the prepared yogurt mixture into the lined baking dish, spreading it evenly to create the bottom layer.

                    Add the Blackberry Mixture:

                      - Drizzle half of the warmed blackberry sauce over the yogurt layer.

                        - Take a knife or skewer and gently create a marbled effect by swirling the blackberry sauce into the yogurt layer.

                          Finish Layering:

                            - Pour the remaining yogurt mixture on top of the first layer, smoothing it out evenly once more.

                              - Drizzle the remaining blackberry sauce on top and again swirl it in gently to create a beautiful pattern.

                                Freeze:

                                  - Cover the baking dish with plastic wrap or aluminum foil. Place it in the freezer and allow it to freeze for at least 4 hours, or until completely solid.

                                    Serve:

                                      - Once fully frozen, lift the parchment paper to remove the yogurt slab from the baking dish.

                                        - Cut into squares or bars as desired.

                                          - Serve immediately for the best taste, or store the squares in an airtight container in the freezer for up to a week.
