Ingredients

4 cups seedless watermelon, cut into cubes

1 ripe banana, sliced

1 cup coconut water (or ordinary water for a milder flavor)

1 tablespoon honey or agave syrup (optional, for added sweetness)

Juice of 1 lime

Fresh mint leaves for garnish (optional)

Instructions

Blend the Base: In a high-speed blender, combine the cubed watermelon, sliced banana, coconut water, honey (if desired), and lime juice. Blend on high until the mixture is completely smooth and creamy, ensuring there are no chunks.

Taste and Adjust: After blending, taste the watermelon mixture. If you prefer a sweeter flavor, gradually add a bit more honey or agave syrup. Briefly blend again to integrate the additional sweetness.

Prep Your Molds: Carefully pour the watermelon mixture evenly into Popsicle molds, ensuring to leave a small gap at the top of each mold to allow for expansion as the pops freeze.

Insert Sticks: If your molds require popsicle sticks, place them into the center of each filled mold, ensuring they are upright and stable.

Freeze: Transfer the filled molds to the freezer and freeze for a minimum of 4-6 hours, or until the pops are completely solid and firm to the touch.

Unmold and Serve: To release the pops from the molds, gently run warm water over the outside of the mold for a few seconds until they loosen. If desired, garnish the pops with fresh mint leaves for a refreshing touch and serve immediately.
