Ingredients

1 cup fresh strawberries, hulled and halved

2 ripe kiwis, peeled and sliced into rounds

1 ½ cups plain Greek yogurt (or your favorite yogurt)

2 tablespoons honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1 tablespoon fresh lemon juice

A pinch of salt

Optional: crushed nuts or granola for topping

Instructions

Prepare the Fruit: Begin by rinsing the strawberries and kiwis under cold water. Remove the green tops from the strawberries and cut them in half. For the kiwis, peel off the skin and slice them into rounds. Set both fruits aside for assembly.

Make the Yogurt Mixture: In a medium-sized mixing bowl, combine the Greek yogurt, honey or maple syrup, vanilla extract, fresh lemon juice, and a pinch of salt. Using a whisk, mix the ingredients together until the mixture is smooth and creamy. Taste the yogurt base and adjust the sweetness to your preference by adding more honey or syrup if desired.

Fill the Silicone Molds: Select silicone molds suitable for freezing yogurt bites; ice cube trays or mini muffin pans are excellent choices. Place one piece of strawberry or kiwi at the bottom of each mold cavity. Next, spoon the creamy yogurt mixture over the fruit, filling each cavity until it reaches the top.

Top with Extras: If you enjoy a bit of crunch, consider sprinkling some crushed nuts or granola on top of the yogurt mixture before placing it in the freezer. This will enhance both the texture and flavor of your yogurt bites.

Freeze: Carefully transfer the filled molds to the freezer. Allow them to freeze for a minimum of 4 hours, or until they are completely solid and ready to be removed.

Remove and Serve: Once frozen, gently extract the yogurt bites from the molds by pushing the bottom of each cavity. If you encounter difficulty, briefly run the mold under warm water for a few seconds to help loosen the bites.

Enjoy: Serve your frozen yogurt bites immediately for a refreshing treat, or store them in an airtight container in the freezer for up to 2 weeks. These delightful, fruity bites make an ideal snack or dessert, especially on warm days!
