Ingredients

4 cups frozen pineapple chunks

1 cup chilled coconut cream

1/2 cup honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1 tablespoon freshly squeezed lime juice

A pinch of sea salt

Optional: Toasted coconut flakes and fresh mint leaves for garnish

Instructions

Blend the Base: In a high-speed blender or food processor, add the frozen pineapple chunks, chilled coconut cream, honey or maple syrup, vanilla extract, lime juice, and a pinch of sea salt.

Process Until Smooth: Begin blending at a low speed, gradually increasing to high. Blend until the mixture is velvety smooth and creamy. You may need to pause occasionally to scrape down the sides of the blender or processor to ensure all ingredients are evenly incorporated.

Taste and Adjust: Once blended, taste your whip and adjust the sweetness by adding more honey or maple syrup if desired. If the mixture feels too thick, enhance the texture by adding a bit more coconut cream or a splash of pineapple juice.

Chill (Optional): If you prefer a firmer texture, transfer the whip to an airtight container and freeze for approximately 30 minutes. This will help it set up nicely.

Serve and Garnish: Scoop the dreamy whip into individual bowls or cups. For an added touch, sprinkle toasted coconut flakes on top and garnish with fresh mint leaves. Serve immediately and enjoy the tropical delight!
