Ingredients

2 cups fresh pineapple chunks (or thawed frozen pineapple)

1 cup full-fat canned coconut milk (for optimal creaminess)

1/4 cup honey or maple syrup (adjust to your desired sweetness)

1/4 cup unsweetened shredded coconut

1 tablespoon freshly squeezed lime juice

1 teaspoon pure vanilla extract

Pinch of sea salt

Optional: Fresh lime zest for garnish

Instructions

Prepare the Pineapple:

    - If you're using fresh pineapple, start by peeling, coring, and cutting it into small chunks. For frozen pineapple, allow it to thaw slightly to ease the blending process.

      Blend Ingredients:

        - In a high-speed blender, combine the prepared pineapple chunks, full-fat coconut milk, honey or maple syrup, shredded coconut, lime juice, vanilla extract, and a pinch of sea salt. Blend thoroughly until the mixture is smooth and creamy.

          Taste Test:

            - Give the blended mixture a taste. Adjust the sweetness or acidity by adding more honey or lime juice, blending again briefly to mix any additions.

              Prepare the Mold:

                - Take a 9x5-inch loaf pan or a silicone mold and lightly grease it with non-stick cooking spray or a thin layer of coconut oil. This will ensure easy removal of the bars later.

                  Pour Mixture:

                    - Carefully pour the blended tropical mixture into your prepared pan, using a spatula to smooth the top evenly.

                      Freeze:

                        - Cover the mold with plastic wrap or a lid, and place it in the freezer. Allow it to freeze for a minimum of 4-6 hours, or until the mixture is completely solid.

                          Slice and Serve:

                            - Once fully frozen, carefully remove the bars from the mold. If they're difficult to slice, let them sit at room temperature for a couple of minutes to soften slightly, which will make cutting easier. Slice into bars or squares depending on your preference.

                              Garnish:

                                - For an extra touch of flavor and color, sprinkle freshly grated lime zest over the bars just before serving.

                                  Store Leftovers:

                                    - If you have any leftover bars, store them in an airtight container in the freezer. They make for perfect tropical treats anytime you crave a sweet and refreshing snack!
