Frozen Peach Melba Popsicles

4 ripe peaches, peeled and chopped

1 cup fresh raspberries

1/2 cup honey or maple syrup (adjust according to fruit sweetness)

1 cup plain Greek yogurt

1 teaspoon vanilla extract

1 tablespoon lemon juice

Pinch of salt

Additional chopped peaches and raspberries for layering (optional)

Prepare the Peach Puree: Place the chopped peaches into a blender and blend until completely smooth. If desired, set aside a small portion of diced peaches for later use as a crunchy layer.

    Create the Raspberry Sauce: In a mixing bowl, mash the fresh raspberries using a fork until they reach a chunky sauce consistency. Stir in 1 tablespoon of honey or maple syrup to sweeten the sauce, adding more if you prefer a sweeter taste. Set the sauce aside.

      Prepare the Yogurt Layer: In another bowl, combine the plain Greek yogurt, vanilla extract, lemon juice, and a pinch of salt. Mix everything together until the mixture is smooth and creamy. Taste and add honey or maple syrup for desired sweetness.

        Layer the Popsicle Molds: Begin by pouring the peach puree into the popsicle molds, filling each mold about one-third of the way. Place the molds in the freezer for approximately 30 minutes, allowing the first layer to set slightly.

          Add Raspberry Sauce Layer: Once the peach layer has firmed up, remove the molds from the freezer and add the raspberry sauce on top of the peach layer. If you reserved any diced peaches, sprinkle them over the raspberry sauce for added texture and flavor.

            Top with Yogurt Layer: Spoon the yogurt mixture on top of the raspberry layer, ensuring to leave a small gap at the top of each mold for the popsicles to expand as they freeze.

              Insert Popsicle Sticks: Carefully place the popsicle sticks into the molds, ensuring they are centered. Return the molds to the freezer and allow them to freeze completely for at least 4 to 6 hours, or until they are solid.

                Unmold the Popsicles: To release the popsicles from the molds, hold the molds under warm running water for a few seconds. Gently pull the popsicles out and savor the refreshing treat!
