1/2 cup fresh raspberries (or frozen raspberries, thawed)

1/4 cup honey or maple syrup

Zest of 1 medium lemon

Prepare the Raspberry Mixture: In a blender or food processor, add the fresh raspberries (or thawed frozen raspberries), lemon juice, and honey (or maple syrup). Blend until the mixture is mostly smooth but retains some raspberry bits for added texture. Set aside.

    Mix the Yogurt Base: In a large mixing bowl, combine the Greek yogurt, lemon zest, and a pinch of salt. Stir well until the ingredients are fully incorporated and the mixture is creamy and smooth.

      Layer the Mixtures: Line a baking sheet with parchment paper to prevent sticking. Using a spoon or a piping bag, drop small dollops (about 1 tablespoon) of the yogurt mixture onto the parchment paper, slightly flattening each dollop. Next, take the raspberry mixture and add a small spoonful on top of each yogurt dollop.
