1 tablespoon granulated sugar

In a mixing bowl, combine the plain Greek yogurt, honey (or agave syrup), vanilla extract, and ground cinnamon. Whisk together until the mixture is smooth and evenly blended.

    Prepare a mini muffin tin by lining it with silicone baking cups or lightly greasing it with cooking spray to facilitate easy removal of the yogurt bites.

      Using a spoon, fill each cup of the muffin tin with approximately 1 tablespoon of the yogurt mixture. Ensure the tops are smooth by leveling them off with a spatula or the back of a spoon.

        In a separate bowl, combine the graham cracker crumbs, melted coconut oil, and granulated sugar. Mix thoroughly until the crumbs are evenly coated in the oil, creating a churro-like coating.

          Generously sprinkle about a teaspoon of the graham cracker mixture over each yogurt mound, gently pressing down to help it adhere firmly.

            In a small bowl, mix together additional ground cinnamon and sugar to your preferred taste, then lightly dust this mixture over the top of each yogurt bite for an added touch of flavor.

              Place the muffin tin in the freezer and allow the yogurt bites to freeze for at least 3-4 hours, or until they are completely solid.
