Ingredients

1 cup plain yogurt (choose either dairy yogurt or non-dairy coconut yogurt)

1 cup finely grated carrots (freshly grated for best flavor)

1/2 cup unsweetened shredded coconut (for added texture)

2 tablespoons honey or maple syrup (adjust to your preferred sweetness)

1 teaspoon vanilla extract (pure vanilla for an aromatic touch)

1/2 teaspoon ground cinnamon (for warm, spiced flavor)

Pinch of salt (to enhance sweetness)

Silicone coin-shaped molds or a small muffin tin (for shaping)

Instructions

Prepare the Mixture: In a large mixing bowl, combine the plain yogurt, finely grated carrots, unsweetened shredded coconut, honey or maple syrup, vanilla extract, ground cinnamon, and a pinch of salt. Using a whisk or spatula, mix thoroughly until all ingredients are well blended and uniform in texture.

Adjust Sweetness: After mixing, taste the yogurt mixture. If you prefer a sweeter treat, gradually add more honey or maple syrup to achieve your desired sweetness. Be sure to stir well after each addition.

Fill the Molds: Take small spoonfuls of the yogurt mixture and fill each cavity of the silicone molds or muffin tin, ensuring each one is filled to the brim. With the back of a spoon or your fingers, gently press down on the mixture to eliminate any air pockets and achieve a compact shape.

Freeze: Carefully place the filled molds on a flat surface in the freezer. Freeze for a minimum of 4 hours, or until the yogurt coins are completely solid and firm to the touch.

Remove from Molds: Once the yogurt coins are frozen solid, carefully remove them from the molds. If using a muffin tin, let them sit at room temperature for 5-10 minutes to soften slightly, which will make it easier to pop them out without breaking.

Store: Transfer the frozen carrot coconut yogurt coins into an airtight container, ensuring they are well-sealed. Keep them stored in the freezer for your next snack or dessert craving!

Serve: Serve these delightful bites as a refreshing snack, dessert, or a cool treat on a warm day. They are perfectly bite-sized and kids will absolutely love them!

Prep Time: 15 minutes | Total Time: 4 hours 15 minutes | Servings: About 12 coins

Presentation Tips: For an extra touch, consider sprinkling a few pieces of shredded coconut on top of the coins before freezing, or serve in colorful bowls garnished with fresh carrot sticks.
