Ingredients

For the Cookie Base:

1 cup all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened to room temperature

1/2 cup packed brown sugar

1/4 cup granulated sugar

1 large egg

1 teaspoon pure vanilla extract

1/2 cup rolled oats

1/2 cup white chocolate chips (optional)

For the Frozen Berry Yogurt Filling:

2 cups mixed frozen berries (such as strawberries, blueberries, and raspberries)

1 cup plain Greek yogurt

2 tablespoons honey or maple syrup (adjust to taste)

1 teaspoon pure vanilla extract

A pinch of sea salt

Instructions

Prepare the Cookie Dough:

    - Preheat your oven to 350°F (175°C).

      - In a small mixing bowl, whisk together the all-purpose flour, baking soda, and salt until well combined; set aside.

        - In a large mixing bowl, use an electric mixer to cream together the softened butter, packed brown sugar, and granulated sugar until the mixture is light and fluffy (about 3-4 minutes).

          - Beat in the egg and vanilla extract until fully incorporated.

            - Gradually add the flour mixture to the wet ingredients, mixing just until combined (be careful not to overmix).

              - Gently fold in the rolled oats and white chocolate chips if using, making sure they are evenly distributed throughout the dough.

                Bake the Cookies:

                  - Spoon tablespoon-sized balls of cookie dough onto a parchment-lined baking sheet, spacing them about 2 inches apart to allow for spreading.

                    - Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers are set.

                      - Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Make the Frozen Berry Yogurt Filling:

                          - In a blender or food processor, combine the frozen mixed berries, plain Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of salt.

                            - Blend the mixture until it is smooth and creamy. Taste the filling and adjust the sweetness according to your preference. If the filling is too thick, you can add a splash of water or milk to help blend smoothly.

                              Assemble the Sandwiches:

                                - Once the cookies have completely cooled, place one cookie flat side up on a clean surface. Add a generous spoonful of the frozen berry yogurt filling on the flat side of the cookie.

                                  - Carefully place another cookie on top of the filling, flat side down, and gently press to create a sandwich.

                                    - Continue the process until all cookies and filling are used up.

                                      Freeze the Sandwiches:

                                        - Arrange the assembled cookie sandwiches on a baking sheet and transfer them to the freezer. Freeze for about 2 hours, or until the filling is firm.

                                          Serve:

                                            - Once the sandwiches are fully frozen, serve immediately or store them in an airtight container in the freezer for up to 1 month for a delightful treat any time.
