Frozen Banana Berry Crunch Sandwiches

2 ripe bananas

1 cup mixed berries (strawberries, blueberries, raspberries)

1/2 cup Greek yogurt (vanilla or plain)

1/4 cup honey or maple syrup

1 cup granola (your favorite kind)

4 slices of whole grain bread

1/2 teaspoon ground cinnamon

1/4 cup chopped nuts (optional, such as almonds or walnuts)

A pinch of salt

Prepare the Bananas: Start by peeling the ripe bananas. Slice them into rounds, approximately 1/4-inch thick. Set aside.

    Blend the Berries: In a blender or food processor, add the mixed berries along with the Greek yogurt. Blend on medium speed until the mixture is smooth and well combined. Drizzle in the honey or maple syrup and a pinch of salt, then blend again briefly to integrate. Taste the mixture and adjust the sweetness if needed.

      Assemble the Sandwiches: On a clean, flat surface, take two slices of whole grain bread. Spread a generous layer of the berry mixture on one side of each slice. On one of the slices, layer the banana rounds evenly, then sprinkle with granola and a dash of ground cinnamon for added flavor. If you’re using nuts, sprinkle some on top as well for extra crunch. Place the second slice of bread on top, berry side down, to complete the sandwich.

        Freeze the Sandwiches: Wrap each assembled sandwich tightly in plastic wrap or aluminum foil. Place the wrapped sandwiches in the freezer and allow them to freeze for at least 2 hours, or until they are firm to the touch.

          Slice and Serve: When ready to enjoy, remove the sandwiches from the freezer and carefully unwrap them. Let them sit at room temperature for about 5 minutes to soften slightly, making slicing easier. Cut each sandwich in half or quarters, and serve your frosty treats immediately.
