Ingredients

6 large eggs

1/4 cup whole milk

1 cup cherry tomatoes, halved

1 cup fresh basil leaves, chopped

1 cup shredded mozzarella cheese

1 small onion, diced

2 cloves garlic, minced

1 tablespoon olive oil

Salt and black pepper, to taste

Optional: a pinch of red pepper flakes for a touch of spice

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to ensure it’s hot and ready for baking the frittata.

Sauté the Vegetables: In a large oven-safe skillet, heat the olive oil over medium heat. Once the oil is shimmering, add the diced onion and minced garlic. Sauté for about 3-4 minutes, stirring frequently, until the onion becomes translucent and fragrant.

Prepare the Egg Mixture: In a medium mixing bowl, crack the eggs and add the whole milk. Whisk everything together vigorously until well blended. Then season with salt and black pepper. Gently fold in the chopped basil, reserving a small amount for garnishing later, and half of the shredded mozzarella cheese.

Add the Tomatoes: Once the onions and garlic are ready, add the halved cherry tomatoes directly to the skillet. Stir gently to combine the tomatoes with the sautéed vegetables, ensuring they’re well distributed.

Combine Everything: Carefully pour the prepared egg mixture over the sautéed vegetables in the skillet. Make sure it spreads evenly throughout the skillet. Finally, sprinkle the remaining mozzarella cheese uniformly on top of the egg mixture.

Cook on the Stovetop: Allow the frittata to cook on the stovetop for about 4-5 minutes. You'll notice the edges begin to set and form a light crust, which is the desired effect.

Bake in the Oven: Transfer the skillet to your preheated oven. Bake for approximately 15-20 minutes, or until the center of the frittata is set and the top is a lovely golden color. For a crispier finish, you can broil the frittata for an additional 1-2 minutes—just keep a close eye on it!

Cool and Serve: Once baked, take the frittata out of the oven and let it cool for a few minutes. This will make it easier to slice. Optionally, garnish with the reserved fresh basil before serving. The frittata can be enjoyed warm or at room temperature, making it perfect for brunch or as a light meal.
