2 medium zucchinis, spiralized into zoodles

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini)

1 cup fresh basil leaves, packed

1/4 cup pine nuts, lightly toasted

1/2 cup extra virgin olive oil

2 tablespoons fresh lemon juice

2 cloves garlic, minced

Salt and pepper, to taste

Balsamic glaze, for drizzling

Prepare the Zoodles: Use a spiralizer to turn the zucchinis into zoodles. If a spiralizer isn’t available, a vegetable peeler can also be utilized to create thin, noodle-like strips. Once prepared, place the zoodles in a bowl and set aside.

    Make the Pesto: In a food processor, combine packed fresh basil leaves, lightly toasted pine nuts, and minced garlic. Add a pinch of salt and black pepper for flavor. Pulse the mixture until it becomes finely chopped. Gradually stream in the extra virgin olive oil and lemon juice while processing, blending until the pesto reaches a smooth and creamy consistency.
