4 whole cloves

1 cinnamon stick

1 tablespoon fish sauce

8 cups chicken stock (homemade or store-bought)

Salt to taste

For the Chicken:

1 pound boneless, skinless chicken thighs

1 tablespoon vegetable oil

Freshly ground black pepper

For the Noodles and Toppings:

8 ounces rice noodles (bánh phở)

1 cup fresh bean sprouts

1 cup fresh basil leaves, washed and dried

1 cup fresh cilantro leaves, washed and dried

2 limes, cut into wedges

Sliced jalapeños (optional, for a spicy kick)

Prepare the Broth:

    - In a dry skillet over medium heat, toast the halved onion and sliced ginger until they develop a lovely char and become fragrant, about 5-7 minutes. This step deepens the flavor of the broth.

      - In a large stockpot, combine the charred onion, ginger, smashed lemongrass, star anise, cloves, cinnamon stick, and chicken stock. Bring everything to a gentle simmer over medium heat.
