8 oz rigatoni pasta

1 cup crumbled feta cheese

1/2 cup dried cranberries

1 cup cherry tomatoes, halved

1/2 cucumber, diced

1/4 red onion, thinly sliced

1/4 cup fresh parsley, finely chopped

1/4 cup extra-virgin olive oil

2 tbsp balsamic vinegar

1 tbsp honey

Salt and freshly ground black pepper to taste

Optional: 1/4 cup toasted pine nuts or walnuts for added crunch

Instructions
 

Cook the Pasta: In a large pot, bring a generous amount of salted water to a rolling boil. Add the rigatoni and cook according to the package instructions, stirring occasionally, until al dente. Drain the pasta and rinse it under cold water to halt the cooking process. Set it aside in a large mixing bowl to cool.

    Prepare the Dressing: In a small mixing bowl, combine the extra-virgin olive oil, balsamic vinegar, honey, and a pinch of salt and pepper. Whisk the mixture vigorously until all ingredients are well blended and emulsified. Taste and adjust seasoning as needed.

      Mix Salad Ingredients: To the bowl with the cooled rigatoni, add the crumbled feta cheese, dried cranberries, halved cherry tomatoes, diced cucumber, thinly sliced red onion, and finely chopped fresh parsley. Gently mix all the ingredients together, being careful not to break the feta too much.
