400g (14 oz) pasta (penne or rigatoni)

200g (7 oz) feta cheese, crumbled

500g (1 lb) cherry tomatoes, halved

4 cloves garlic, minced

1 medium onion, finely chopped

4 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon red pepper flakes (optional for heat)

Salt and freshly ground black pepper, to taste

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving

Instructions
 

Preheat the Oven: Start by preheating your oven to 200°C (400°F) to prepare for baking the pasta dish.

    Cook the Pasta: Bring a large pot of generously salted water to a rolling boil. Add the pasta and cook according to the package instructions until al dente, usually about 8-10 minutes. Once cooked, drain the pasta and set it aside briefly.

      Sauté the Vegetables: In a large, oven-safe skillet or baking dish, heat 4 tablespoons of olive oil over medium heat. Add the chopped onion and sauté for about 4-5 minutes until it’s soft and translucent. Next, stir in the minced garlic and cook for another minute until fragrant, being careful not to let it burn.

        Add Tomatoes and Spices: Incorporate the halved cherry tomatoes into the skillet along with the dried oregano, dried basil, and red pepper flakes (if using). Season the mixture with salt and freshly ground black pepper. Allow it to cook for about 5-7 minutes, stirring occasionally, until the tomatoes soften and begin to release their juices.

          Combine Pasta and Feta: Gently fold the cooked pasta and crumbled feta cheese into the skillet with the tomato mixture. Toss everything carefully to ensure the pasta is evenly coated with the delicious sauce.
