Ingredients

1 pound Italian sausage (choose between sweet or spicy based on your preference)

1 medium onion, finely diced

3 cloves garlic, minced

4 medium carrots, sliced into coins

3 medium potatoes, diced (recommended: Yukon Gold or sweet potatoes for added sweetness)

1 bunch fresh kale, stems removed and coarsely chopped

4 cups chicken or vegetable broth

1 can (14.5 oz) diced tomatoes, with their juices included

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and freshly ground black pepper, to taste

2 tablespoons olive oil

Optional: ½ cup heavy cream or coconut milk for added creaminess

Fresh parsley, chopped (for garnish)

Instructions

Brown the Sausage: In a large skillet over medium heat, pour in the olive oil. Once the oil is shimmering, add the Italian sausage. Use a wooden spoon to break the sausage into smaller pieces. Cook until it’s browned and slightly crispy, about 5-7 minutes. Once browned, use a slotted spoon to drain any excess fat and transfer the sausage to your crockpot.

Sauté the Vegetables: In the same skillet used for the sausage, add the diced onion. Sauté until the onion becomes translucent and tender, about 3-4 minutes. Add the minced garlic and sauté for an additional minute until fragrant. Transfer the sautéed onion and garlic mixture to the crockpot, ensuring all flavors are combined.

Add Remaining Ingredients: To the crockpot, add the sliced carrots, diced potatoes, diced tomatoes (with their juices), dried thyme, dried oregano, and the broth. Stir thoroughly to ensure all ingredients are well combined.

Season the Mixture: Season the contents of the crockpot with salt and freshly ground black pepper to taste. Feel free to adjust the seasoning according to your personal preference.

Cook the Dish: Cover the crockpot and cook the mixture on the low setting for 6-8 hours, or on high for 3-4 hours. The longer cooking time will allow the flavors to meld beautifully.

Incorporate the Kale: About 30 minutes before the cooking time is completed, stir in the chopped kale. This will allow the kale to wilt and become tender without overcooking.

Optional Creaminess: If you desire a creamier texture, mix in the heavy cream or coconut milk during the last few minutes of cooking for a rich finish.

Serve the Delight: Once the cooking time is complete, taste the dish and adjust seasonings if necessary. Serve the hearty stew hot, garnished with a sprinkle of fresh parsley for a touch of color and freshness.

Prep Time: 15 minutes | Total Cooking Time: 6-8 hours | Servings: 6-8

                    - Presentation Tips: Serve the stew in rustic bowls with a crusty slice of bread on the side for a warm, comforting meal. A drizzle of olive oil on top just before serving can add an aromatic touch.
