4 cups of fresh corn kernels (approximately 6 ears of corn)

2 tablespoons mayonnaise

2 tablespoons sour cream

1 teaspoon chili powder

1 teaspoon smoked paprika

1 clove garlic, minced

1 tablespoon freshly squeezed lime juice

1/2 cup crumbled cotija cheese

2 tablespoons fresh cilantro, finely chopped

Lime wedges, for serving

Prep the Corn: If you're using fresh corn, shuck the ears carefully, then use a sharp knife to cut the kernels off the cobs. If you prefer frozen corn, make sure to thaw it completely and drain any excess moisture.

    Cook the Corn: Heat a large skillet over medium heat and add the prepared corn kernels. Sauté the corn, stirring occasionally, for about 5-7 minutes until the kernels are tender and begin to caramelize, achieving a beautiful golden brown color. Once done, remove the skillet from the heat and allow the corn to cool slightly.
