1 cup of milk (whole or your favorite dairy alternative)

1 cup of shredded cheddar cheese

1 cup of diced bell peppers (a vibrant mix of red and green)

1 small onion, finely chopped

1 can (15 oz) black beans, drained and rinsed thoroughly

1 can (4 oz) diced green chilies (choose mild or hot based on your spice preference)

1 tsp ground cumin

1 tsp chili powder

½ tsp smoked paprika

Salt and black pepper to taste

1 package (8 oz) tortilla chips, slightly crushed

Fresh cilantro, chopped, for garnish (optional)

1 avocado, diced for topping (optional)

Hot sauce for serving (optional)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Lightly grease a 9x13 inch baking dish with cooking spray or a drizzle of olive oil to prevent sticking.

    Prepare the Egg Mixture: In a large mixing bowl, crack the eggs and whisk them together with the milk, ground cumin, chili powder, smoked paprika, salt, and black pepper until the mixture is smooth and well combined. Set this aside for later use.

      Sauté the Vegetables: Heat a splash of olive oil in a non-stick skillet over medium heat. Add the finely chopped onion and diced bell peppers. Sauté these until they become soft and translucent, which should take about 5-7 minutes. Once done, remove the skillet from heat and set aside.

        Combine Ingredients in the Baking Dish: In your prepared baking dish, create an even layer with the crushed tortilla chips at the bottom.
