Ingredients

1 sheet of puff pastry (thawed if frozen)

4 medium ripe tomatoes (thinly sliced)

1 cup fresh basil leaves

1 cup shredded mozzarella cheese

1/2 cup ricotta cheese

2 tablespoons olive oil

2 cloves garlic (finely minced)

1 teaspoon balsamic vinegar

Salt and freshly ground black pepper to taste

1 egg (beaten, for egg wash)

Optional: sliced olives or capers for garnish

Instructions

Prepare the Oven and Puff Pastry: Preheat your oven to 400°F (200°C). On a lightly floured surface, roll out the puff pastry until it is large enough to fit your tart pan, about 1/4-inch thick. Carefully transfer the pastry to the tart pan, pressing it into the edges and trimming any excess dough hanging over the sides.

Prepare the Cheese Mixture: In a mixing bowl, combine the ricotta cheese, half of the shredded mozzarella cheese, minced garlic, olive oil, balsamic vinegar, and a generous pinch of salt and pepper. Stir the mixture together until it is well combined and smooth, ensuring the garlic is evenly distributed.

Assemble the Tart: Evenly spread the ricotta mixture across the puff pastry base, reaching the edges. Arrange the sliced tomatoes on top, overlapping them slightly to create an appealing pattern. Finish by sprinkling the remaining shredded mozzarella evenly over the tomatoes for a cheesy topping.

Incorporate Fresh Basil: Gently tuck fresh basil leaves between the tomato slices, allowing their fragrant flavor to infuse into the tart. Add a handful of additional basil leaves over the top to enhance the visual appeal and taste.

Apply Egg Wash: Using a pastry brush, lightly coat the outer edges of the puff pastry with the beaten egg. This will help to create a beautiful golden crust as the tart bakes.

Bake to Perfection: Place the assembled tart in the preheated oven and bake for 25-30 minutes. The tart is ready when the pastry is puffed and a rich golden brown, and the cheese is melted and bubbling.

Optional Garnish: For an extra touch of flavor, scatter sliced olives or capers over the top of the tart just before serving.

Serve and Enjoy: Allow the tart to cool for a few minutes before slicing it into wedges. Serve warm or at room temperature, garnished with extra basil leaves for a refreshing finish.
