1 cup uncooked white rice

2 cups water or chicken broth

1 pound ground beef or turkey

1 packet taco seasoning mix

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies (like Ro-tel)

1 cup shredded cheddar cheese, divided

1 cup salsa

1-2 cups shredded lettuce (for topping)

1 avocado, diced (for topping)

Sour cream (optional, for serving)

Fresh cilantro, chopped (for garnish, optional)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) to ensure it’s ready for baking.

    Cook the Rice: In a medium saucepan, bring 2 cups of water or chicken broth to a boil. Add in 1 cup of uncooked white rice, stir briefly, then reduce the heat to low. Cover the saucepan and simmer for approximately 18-20 minutes, or until the rice is tender and the liquid has been fully absorbed.

      Brown the Meat: While the rice is cooking, heat a large skillet over medium heat. Add the ground beef or turkey to the skillet, cooking it until it is thoroughly browned. Use a spatula to break it into smaller pieces as it cooks. Once browned, drain any excess fat from the skillet.

        Season the Meat: To the browned meat, add the entire packet of taco seasoning. Stir in the drained black beans, drained corn, and diced tomatoes with green chilies. Mix well and allow it to simmer for about 5-7 minutes, letting the flavors meld together.

          Combine Ingredients: In a large mixing bowl, combine the cooked rice, cooked meat mixture, salsa, and half of the shredded cheddar cheese. Stir everything together until all components are evenly incorporated.

            Transfer to Casserole Dish: Lightly grease a 9x13 inch casserole dish. Pour the rice and meat mixture into the dish, spreading it out evenly.
