Ingredients

2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

Salt and freshly ground black pepper, to taste

1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 cup cooked rice (white, brown, or quinoa)

1 cup cherry tomatoes, halved

1 ripe avocado, diced

1/4 cup fresh cilantro, finely chopped

Juice of 1 lime

Optional toppings: shredded cheese, sour cream, sliced jalapeños, salsa

Instructions

Season the Chicken: Begin by patting the chicken breasts dry with paper towels. Drizzle with olive oil and season both sides generously with chili powder, ground cumin, smoked paprika, salt, and pepper. Ensure the spices are evenly distributed by rubbing them into the chicken.

Cook the Chicken: Heat a skillet over medium-high heat and add the seasoned chicken. Cook for approximately 6-7 minutes on each side, or until the chicken is golden brown and reaches an internal temperature of 165°F (75°C). Once cooked, remove the chicken from the skillet and let it rest for a few minutes before slicing it into thin strips.

Sauté the Vegetables: In the same skillet, add the corn and black beans. Sauté over medium heat for about 2-3 minutes, stirring occasionally, until they are heated through. Then, fold in the cooked rice until it is well combined and warmed throughout.

Build the Fiesta Bowls: In serving bowls, start by layering the rice, corn, and black bean mixture as the base. Next, arrange the sliced chicken on top, followed by the halved cherry tomatoes, diced avocado, and a sprinkle of chopped cilantro.

Finish with Freshness: Squeeze fresh lime juice over each bowl to add a zesty punch. Enhance your Southwest Fiesta Bowl with optional toppings such as shredded cheese, a dollop of sour cream, sliced jalapeños, or a scoop of salsa, according to your preference.

Serve and Enjoy: Gently mix all the elements together in your bowl to combine the vibrant flavors. Dive into your delicious Southwest Fiesta Bowl and savor every bite!
