Easy Shrimp Ceviche Cups

1 lb fresh shrimp, peeled and deveined

1 cup fresh lime juice (approximately 8-10 limes, juiced)

1 medium red onion, finely chopped

1 cup cherry tomatoes, diced

1 medium cucumber, peeled and finely diced

1 jalapeño, finely chopped (seeds removed to reduce heat)

1/4 cup fresh cilantro, chopped

Salt and pepper, to taste

12 small lettuce leaves or mini tortilla cups (for serving)

Optional: Slices of avocado for garnish

Prep the Shrimp: In a medium-sized pot, bring water to a rolling boil. Carefully add the peeled and deveined shrimp, cooking for about 1-2 minutes until they turn pink and opaque. Once cooked, drain the shrimp and immediately transfer them to an ice bath to halt the cooking process. Once they are cool, chop the shrimp into small bite-sized pieces.

    Marinate the Shrimp: In a large mixing bowl, combine the chopped shrimp with the fresh lime juice. Cover the bowl with plastic wrap or a lid, and refrigerate for about 30 minutes to allow the shrimp to marinate and cook in the acidity of the lime juice.

      Combine Ingredients: After the marinating period, add the finely chopped red onion, diced cherry tomatoes, cucumber, jalapeño, and chopped cilantro to the shrimp mixture. Gently toss the ingredients together until evenly mixed. Season with salt and pepper according to your taste preferences.

        Assemble: Prepare a serving platter by placing the small lettuce leaves or mini tortilla cups on it. Using a spoon, fill each lettuce leaf or tortilla cup with the shrimp ceviche mixture, making sure they are generously filled.
