1/4 cup cornmeal

2 large eggs

1/4 cup green onions, finely chopped

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon baking powder

Salt and pepper to taste

Prepare the Zucchini: Begin by grating the zucchini using a box grater or a food processor. Once grated, place the zucchini in a clean kitchen towel. Twist the towel to wring out as much moisture as possible; this step is crucial for crispy fritters. Set the drained zucchini aside in a large mixing bowl.

    Mix the Ingredients: In the bowl with the zucchini, add the sweet corn kernels, all-purpose flour, cornmeal, eggs, finely chopped green onions, garlic powder, onion powder, baking powder, salt, and pepper. Mix thoroughly with a fork or wooden spoon until all ingredients are well integrated. The mixture should be thick enough to hold its shape.

      Heat the Oil: In a large skillet, pour in enough oil to cover the bottom by about 1/4 inch. Heat the oil over medium heat. To check if it’s hot enough, drop a small spoonful of the fritter batter into the oil; it should sizzle immediately if the oil is ready.
