Ingredients

8 oz fettuccine pasta

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

2 cups fresh spinach, roughly chopped

2 tablespoons olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup freshly grated Parmesan cheese

Salt and pepper, to taste

1/2 teaspoon Italian seasoning

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: Begin by bringing a large pot of salted water to a rolling boil. Add the fettuccine and cook according to the package instructions, until al dente (typically around 8-10 minutes). Once cooked, drain the pasta, but be sure to reserve about 1/2 cup of the starchy pasta water for later use. Set the drained pasta aside.

Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Season the bite-sized chicken pieces with salt, pepper, and Italian seasoning for added flavor. Add the chicken to the skillet and cook for about 5-7 minutes, stirring occasionally, until the chicken is golden brown and completely cooked through. Once done, remove the chicken from the skillet and place it on a plate, keeping it warm.

Sauté the Garlic: Using the same skillet to capture those delicious bits left from the chicken, add a splash more olive oil if necessary. Add the minced garlic and sauté for approximately 1 minute, stirring constantly until fragrant — be careful not to let it burn.

Make the Alfredo Sauce: Lower the heat to medium-low and carefully pour in the heavy cream, stirring continuously to combine. Allow the cream to simmer gently for about 2-3 minutes. Gradually whisk in the freshly grated Parmesan cheese, stirring until the sauce reaches a smooth and creamy consistency. If the sauce is too thick, slowly add a little of the reserved pasta water until your desired sauce thickness is achieved.

Add Spinach and Chicken: Stir in the chopped fresh spinach, mixing thoroughly until the spinach wilts into the sauce. Then, add the cooked chicken back into the skillet, ensuring all ingredients are well combined and coated with the creamy sauce.

Combine with Pasta: Add the cooked fettuccine to the skillet, and carefully toss everything together so the pasta is generously coated with the Alfredo sauce. Taste and adjust the seasoning with additional salt and pepper if needed.

Serve: Plate your creamy chicken Alfredo pasta, making sure to distribute the chicken and spinach evenly across the servings. Garnish with a sprinkle of fresh chopped parsley for a touch of color and freshness. Serve immediately, and enjoy your delicious meal!
