Ingredients

200g udon noodles

2 tablespoons white miso paste

1 tablespoon soy sauce

1 tablespoon sesame oil

1 tablespoon vegetable oil

2 cloves garlic, minced

1-inch piece ginger, grated

200g mixed mushrooms (shiitake, cremini, and oyster), sliced

1 cup bok choy, chopped

2 green onions, sliced (for garnish)

1 tablespoon sesame seeds (for garnish)

4 cups vegetable broth

1 teaspoon chili flakes (optional, for an extra kick)

Fresh cilantro or parsley, for garnish

Instructions

Cook the Udon Noodles: Start by bringing a large pot of water to a rolling boil. Add the udon noodles and cook according to the package instructions, which usually takes about 3-4 minutes. Once cooked, drain the noodles and rinse them under cold running water to halt the cooking process. Set aside for later use.

Prepare the Miso Sauce: In a small mixing bowl, combine the white miso paste, soy sauce, and 1/2 cup of vegetable broth. Whisk these together until you achieve a smooth, homogenous mixture. Set this flavorful miso sauce aside for later integration into the dish.

Sauté the Aromatics: Heat a large pan or wok over medium heat and add the vegetable oil along with the sesame oil. Once hot, add the minced garlic and grated ginger. Sauté these aromatics for about 30 seconds, stirring continuously, until they become fragrant and golden.

Cook the Mushrooms: Introduce the sliced mushrooms to the pan, stirring gently. Sauté for approximately 5-7 minutes, allowing the mushrooms to soften and release their natural juices. Make sure to stir occasionally to prevent the mushrooms from sticking to the bottom of the pan.

Add Liquid and Bok Choy: Pour the remaining vegetable broth into the pan and increase the heat to bring the mixture to a gentle simmer. Stir in the prepared miso sauce until it is evenly distributed. Then, add the chopped bok choy, letting it cook for an additional 2-3 minutes, or until it wilts down.

Combine Udon: Carefully add the cooked udon noodles to the flavorful mushroom-broth mixture. Gently toss the noodles to ensure they are well coated with the delicious sauce. If desired, sprinkle in the chili flakes for an added touch of heat, then allow everything to simmer together for another minute.

Serve: Once everything is well combined and heated through, ladle the Earthy Miso Mushroom Udon into serving bowls. Garnish each bowl with the sliced green onions, sesame seeds, and a sprinkle of fresh cilantro or parsley for a vibrant touch.

Enjoy: Serve your dish hot, and relish in the warm, nourishing flavors of this umami-packed creation!
