1 large cucumber, peeled and diced

1 cup fresh mint leaves, plus extra for garnish

1 cup freshly squeezed lemon juice (approximately 4-6 lemons)

1/2 cup honey or agave syrup (adjust according to desired sweetness)

4 cups cold water

Ice cubes

Lemon slices (for garnish)

Blend the Cucumber: Begin by placing the diced cucumber and half of the fresh mint leaves into a blender. Add 1 cup of cold water and blend the mixture until it becomes smooth and homogenous.

    Strain the Mixture: Once blended, pour the cucumber and mint mixture through a fine-mesh strainer or a piece of cheesecloth into a large pitcher. Use a spatula or the back of a spoon to press down on the solids to extract as much liquid as possible. Discard any solids left behind.

      Combine Ingredients: In the pitcher containing the cucumber juice, add the freshly squeezed lemon juice and the honey or agave syrup. Pour in the remaining 3 cups of cold water. Stir thoroughly to ensure all the ingredients are well combined and the sweetener is dissolved.

        Infuse with Mint: To enhance the flavor, add the remaining mint leaves to the pitcher. For a more pronounced minty aroma and taste, allow the mixture to infuse in the refrigerator for at least 30 minutes.
