1 lb ground turkey or beef

1 packet taco seasoning (or use a homemade blend of chili powder, cumin, paprika, garlic powder, onion powder, and salt)

1 cup corn kernels (fresh, frozen, or canned)

1 cup canned black beans, rinsed and drained

1 cup diced tomatoes (use fresh or canned, depending on availability)

1 cup shredded cheddar cheese

1 ripe avocado, diced

1/2 cup sour cream or Greek yogurt

1/4 cup fresh cilantro, chopped

1 lime, cut into wedges for garnish

1 head of iceberg lettuce (or romaine), leaves separated for wrapping

Salt and pepper to taste

Cook the Meat: In a large skillet, heat a splash of oil over medium heat. Add the ground turkey or beef, breaking it up with a spatula as it cooks. Continue to sauté until browned and fully cooked, approximately 7-10 minutes. If necessary, drain any excess fat from the pan.

    Add Seasoning: Sprinkle the taco seasoning over the browned meat, stirring to incorporate. Follow package instructions for water addition, typically around 1/2 cup. Let the mixture simmer for about 5 minutes, allowing the flavors to meld together.

      Mix in Ingredients: To the seasoned meat, add corn, black beans, and diced tomatoes. Mix thoroughly and heat until everything is warmed through, about 3 minutes. Taste and adjust seasoning with salt and pepper as desired.

        Prepare Lettuce Wraps: While the meat mixture is warming, rinse the lettuce carefully under cold water and separate the leaves. Pat them dry gently with a paper towel to remove excess moisture. Arrange the cleaned leaves on a platter or plate for easy assembly.
