2 cups pecan halves

1/2 cup pure maple syrup

1/4 cup brown sugar, firmly packed

1 teaspoon pure vanilla extract

1 tablespoon unsalted butter (for greasing)

    Toast the Pecans: Spread the pecan halves in a single layer on the prepared baking sheet. Place them in the preheated oven and toast for about 10 minutes, or until they are fragrant and lightly golden. Be sure to stir the pecans halfway through the toasting time to ensure they brown evenly.

      Prepare the Glaze: While the pecans are toasting, take a medium saucepan and combine the maple syrup, brown sugar, vanilla extract, sea salt, ground cinnamon, and freshly grated nutmeg (if using). Heat the mixture over medium heat, stirring frequently, until it reaches a bubbling state and the sugar has fully dissolved, approximately 3 to 5 minutes. Once ready, remove from heat.

        Combine Ingredients: In a large mixing bowl, add the toasted pecans and rolled oats (if using) to the warm maple glaze. Stir well until every nut is beautifully coated with the glaze.
