1 cup jasmine rice

1 block (14 oz) firm tofu, drained and pressed

1 tablespoon cornstarch

2 tablespoons vegetable oil (plus more if needed)

1 red bell pepper, diced

1 zucchini, diced

1 cup broccoli florets

3 green onions, chopped

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1/4 cup soy sauce

2 tablespoons sriracha (adjust to taste)

1 tablespoon rice vinegar

1 tablespoon sesame oil

Sesame seeds (for garnish)

Fresh cilantro (for garnish)

Instructions
 

Prepare the Rice:

    Rinse the jasmine rice under cold water in a fine mesh strainer, ensuring the water runs clear to remove excess starch. In a medium saucepan, combine the rinsed rice with 2 cups of water. Bring to a vigorous boil over high heat. Once boiling, reduce the heat to low, cover with a lid, and let it simmer gently for 15-18 minutes, or until the water is completely absorbed and the rice is tender. Once done, fluff the rice with a fork and keep warm.

      Prepare the Tofu:

        While the rice cooks, cut the pressed tofu into even bite-sized cubes for uniform cooking. In a large mixing bowl, sprinkle the cornstarch over the tofu cubes and toss gently until all sides are coated evenly. This step is key to achieving a crispy texture when frying.

          Cook the Tofu:

            Heat 2 tablespoons of vegetable oil in a non-stick skillet over medium-high heat. Once the skillet is hot, add the cornstarch-coated tofu in a single layer, ensuring not to overcrowd the pan. Cook for about 5-7 minutes, turning the tofu occasionally, until all sides are golden brown and crispy.
