1 block (14 oz) firm tofu, pressed and drained

1 cup breadcrumbs (Panko for extra crunch)

1 cup all-purpose flour

1 cup plant-based milk (unsweetened)

1/2 cup buffalo sauce (plus more for drizzling if desired)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

4-6 corn or flour tortillas (depending on size)

1 cup shredded lettuce

1/2 cup diced tomatoes

1/4 cup sliced green onions

1/4 cup vegan ranch dressing (optional)

Fresh cilantro for garnish (optional)

Prepare the Tofu: Start by pressing the tofu for at least 30 minutes to eliminate excess moisture. Afterward, cut the tofu into bite-sized cubes or rectangles, approximately 1 inch in size.

    Set Up Your Stations: Create a breading station by placing the flour in one bowl. Season the flour with garlic powder, onion powder, smoked paprika, salt, and black pepper. In a second bowl, pour the plant-based milk, and in a third bowl, add the breadcrumbs.

      Bread the Tofu: Take each piece of tofu and first coat it in the seasoned flour mixture, shaking off any excess. Next, dip it into the plant-based milk, and finally coat it with breadcrumbs, ensuring a thorough coverage. Arrange the breaded tofu pieces on a baking sheet lined with parchment paper.
