Crockpot Apple Cinnamon Oats

1 cup rolled oats

2 medium apples, peeled, cored, and diced (preferably Fuji or Honeycrisp)

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon salt

2 1/2 cups almond milk (or any milk of your choice)

1/4 cup pure maple syrup (or honey, if preferred)

1 teaspoon vanilla extract

1/2 cup chopped walnuts (optional)

1/4 cup raisins or currants (optional)

For serving: additional sliced apples, a drizzle of maple syrup, extra chopped nuts, and a sprinkle of cinnamon

Prepare the Slow Cooker: Begin by spraying the interior of your crockpot with non-stick cooking spray or lightly greasing it with a small amount of oil. This will help prevent the oats from sticking while cooking.

    Mix the Dry Ingredients: In a large mixing bowl, combine the rolled oats, diced apples, ground cinnamon, ground nutmeg, and salt. Stir everything together until the ingredients are well incorporated.

      Combine Wet Ingredients: In a separate bowl, whisk together the almond milk, pure maple syrup, and vanilla extract until the mixture is smooth and cohesive.
