Crispy Tortilla Egg Quesadillas

4 large flour tortillas

4 large eggs

1 cup shredded cheese (cheddar or pepper jack recommended)

1/2 cup diced bell peppers (any color)

1/4 cup chopped green onions

1/4 cup cooked and crumbled chorizo (optional for extra flavor)

1/4 teaspoon smoked paprika

Salt and pepper, to taste

2 tablespoons butter (divided)

Salsa, guacamole, or sour cream (for serving)

Instructions
 

Prepare the Filling:

    In a mixing bowl, crack the eggs and whisk them thoroughly until well combined. Add in the diced bell peppers, chopped green onions, cooked chorizo (if using), smoked paprika, and a pinch of salt and pepper. Mix everything together until all ingredients are evenly distributed.

      Cook the Eggs:

        Heat a large non-stick skillet over medium heat and melt 1 tablespoon of butter. Once the butter is sizzling, pour the egg mixture into the skillet. Allow the mixture to sit for about 1-2 minutes without stirring, then gently stir occasionally as it cooks. Scramble the eggs until they are fully cooked and just set, which should take about 4-5 minutes. Once done, remove from heat and set the cooked eggs aside.

          Assemble the Quesadillas:

            Take one tortilla and lay it flat on a clean surface or cutting board. Sprinkle approximately 1/4 cup of the shredded cheese over half of the tortilla. Spoon a generous portion of the scrambled egg mixture over the cheese, followed by another sprinkle of 1/4 cup of cheese on top of the eggs. Fold the tortilla in half to create a semi-circle, pressing down gently to secure the filling.

              Cook the Quesadillas:

                Using the same skillet, melt the remaining tablespoon of butter over medium heat. Place the folded quesadilla in the skillet and cook for about 3-4 minutes on one side, or until it turns golden brown and crispy. Carefully flip the quesadilla using a spatula, and add the remaining butter to the skillet if needed. Cook the other side for an additional 3-4 minutes until it’s equally crispy and the cheese has melted.

                  Serve:

                    Once cooked, remove the quesadilla from the skillet and allow it to cool slightly. Use a sharp knife or pizza cutter to slice it into wedges. Serve hot with your choice of salsa, guacamole, or sour cream on the side for dipping.
