Ingredients

2 large sweet potatoes

1 tablespoon olive oil

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon ground cumin

Salt and freshly ground black pepper, to taste

1 cup canned black beans, rinsed and drained

1 cup corn (fresh, canned, or frozen)

1 cup cherry tomatoes, halved

1 cup shredded cheese (choose cheddar, Monterey Jack, or a plant-based alternative)

1 ripe avocado, diced

1/2 cup pickled jalapeños (optional for a spicy kick)

Fresh cilantro leaves, for garnish

Salsa or hot sauce, for serving

Sour cream or Greek yogurt, for drizzling (optional)

Instructions

Preheat the Oven: Set your oven to 425°F (220°C) to prepare for the crispy sweet potato chips.

Prepare the Sweet Potatoes: Rinse the sweet potatoes well and peel the skin off. Using a sharp knife or a mandoline, slice the sweet potatoes into thin rounds, aiming for about 1/4 inch thick for ideal crispiness.

Season the Sweet Potatoes: Place the sweet potato rounds in a large mixing bowl. Drizzle with olive oil and sprinkle with smoked paprika, garlic powder, ground cumin, salt, and pepper. Toss thoroughly to ensure each slice is evenly coated with the seasonings.

Bake the Sweet Potato Chips: Arrange the seasoned sweet potato slices in a single layer on a large baking sheet lined with parchment paper (this helps with easy cleanup). Bake in the preheated oven for 25-30 minutes, flipping the slices halfway through the cooking time, until they achieve a crispy, golden-brown color. Keep a close watch towards the end to avoid burning.

Assemble the Nachos: Once the sweet potato chips are out of the oven and crispy, begin layering them on a large serving platter. Start with a base of half the sweet potato chips, then top them with half of the black beans, corn, cherry tomatoes, and shredded cheese. Add another layer of the remaining sweet potato chips, followed by the rest of the toppings.

Melt the Cheese: Place the assembled nachos back in the oven and bake for an additional 5-7 minutes, until the cheese is melted and starts to bubble.

Serve: After removing the nachos from the oven, allow them to cool for a couple of minutes. Top with diced avocado, optional pickled jalapeños for heat, and a generous sprinkle of fresh cilantro. Serve immediately with salsa or hot sauce on the side, along with optional sour cream or Greek yogurt for a cool, creamy finish.

Enjoy the delightful crunch and perfect balance of savory and sweet in these scrumptious nachos!
