Ingredients

4 large ears of corn

1 cup grated Parmesan cheese

1 cup breadcrumbs (preferably panko for extra crunch)

2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (optional, for a spicy kick)

½ teaspoon salt

¼ teaspoon black pepper

¼ cup fresh parsley, finely chopped (for garnish)

¼ cup olive oil

1-2 tablespoons ranch seasoning (optional, for added flavor)

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). To ensure easy cleanup, line a large baking sheet with parchment paper.

Prepare the Corn: Carefully remove the corn kernels from each ear of corn using a sharp knife. For a visually attractive presentation, maintain the cob halves intact. Position each ear of corn upright and slice downwards, creating 'ribs' by cutting through the kernels from the top to the bottom. You should have approximately 4-6 ribs from each ear.

Make the Coating: In a mixing bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper. Stir the mixture thoroughly to ensure all the flavors are evenly mixed.

Coat the Corn Ribs: In a separate bowl, drizzle olive oil over the corn ribs, making sure each rib is well coated. Then, take each corn rib and dip it into the Parmesan-breadcrumb mixture, pressing lightly to ensure the coating adheres securely. Arrange the coated corn ribs on the prepared baking sheet.

Bake: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the corn ribs are golden brown and crispy. For an additional crunch, you can broil them for an extra 2-3 minutes at the end, but watch closely to prevent burning.

Finishing Touches: Once baked, remove the corn ribs from the oven and sprinkle finely chopped fresh parsley on top for a bright pop of color and added flavor. If desired, give them a light dusting of ranch seasoning for an extra zing.

Serve and Enjoy: Serve the crispy Parmesan corn ribs warm, accompanied by your favorite dipping sauce or a squeeze of fresh lemon juice to enhance their flavors.
