Crispy Parmesan Baked Mushroom Fries

1 lb (450g) large portobello or cremini mushrooms

1 cup all-purpose flour

2 large eggs, beaten

1 cup breadcrumbs (preferably panko for extra crunch)

1 cup grated Parmesan cheese

1 tsp garlic powder

1 tsp onion powder

1 tsp Italian seasoning

1/2 tsp paprika

Salt and pepper, to taste

Olive oil spray or 2 tablespoons of olive oil

Fresh parsley, finely chopped (for garnish)

Instructions
 

Preheat the Oven: Set your oven to 425°F (220°C) to heat up while you prepare the ingredients. To make cleanup a breeze, line a baking sheet with parchment paper.

    Prepare the Mushrooms: Gently wipe the mushrooms clean with a damp cloth to remove any dirt. Remove the stems from the mushrooms. For portobello mushrooms, slice them into thick fries about 1/2 inch wide. If using smaller cremini mushrooms, you can either slice them in half or leave them whole, depending on your preference.

      Set Up the Dredging Station: Arrange three shallow bowls: in the first bowl, add the all-purpose flour. In the second, pour in the beaten eggs. In the third bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, Italian seasoning, paprika, salt, and pepper. Mix well to ensure all dry ingredients are evenly distributed.

        Coat the Mushroom Fries: Take one mushroom slice at a time, first dipping it into the flour to ensure it is thoroughly coated. Shake off any excess flour. Next, dip the floured mushroom into the egg mixture, allowing any excess egg to drip back into the bowl. Finally, roll the mushroom in the breadcrumb-Parmesan mixture. Gently press the coating onto the mushroom to ensure it adheres well.

          Arrange on Baking Sheet: Lay the coated mushroom fries in a single layer on the prepared baking sheet. If desired, lightly spray the tops of the mushrooms with olive oil or drizzle them with the 2 tablespoons of olive oil to promote a crispy texture during baking.

            Bake the Fries: Place the baking sheet in the preheated oven and bake the mushroom fries for 20-25 minutes. Be sure to flip them halfway through the baking time to ensure even crisping. They are done when golden brown and delightful and crispy.

              Garnish and Serve: Once they’re perfectly baked, take the mushroom fries out of the oven and let them cool for a few minutes. Sprinkle freshly chopped parsley over the top for a burst of color and flavor. Serve these irresistible fries warm alongside your favorite dipping sauce, such as marinara or a creamy garlic aioli.
