12 fresh jalapeño peppers

1 cup cream cheese, softened to room temperature

1 cup sharp cheddar cheese, shredded

1/2 cup mozzarella cheese, shredded

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon smoked paprika

Salt and black pepper, to taste

1 cup all-purpose flour

2 large eggs, beaten

2 cups panko breadcrumbs

Prepare the Jalapeños: Begin by preheating your oven to 400°F (200°C). Carefully slice each jalapeño pepper in half lengthwise. Using a spoon or a small knife, remove the seeds and membranes for a milder flavor. If you enjoy more heat, feel free to leave a few seeds intact.

    Make the Filling: In a mixing bowl, combine the softened cream cheese, shredded sharp cheddar cheese, shredded mozzarella cheese, garlic powder, onion powder, smoked paprika, and a pinch of salt and black pepper. Mix energetically with a fork or spatula until the cheeses blend into a smooth, creamy mixture.

      Stuff the Peppers: Spoon the flavorful cheese mixture generously into each jalapeño half. Press down slightly to ensure the filling stays in place without spilling over.

        Coat the Peppers: Set up a breading station with three shallow dishes. Place the flour in one dish, beaten eggs in the second, and panko breadcrumbs in the third. Take each stuffed jalapeño, and first dredge it in the flour, shaking off any excess.
