1/4 red onion, thinly sliced

1/4 cup feta cheese, crumbled (optional)

1/4 cup tahini dressing (store-bought or homemade)

For Homemade Tahini Dressing (optional):

1/3 cup tahini

2 tablespoons fresh lemon juice

1 tablespoon olive oil

1 clove garlic, minced

Water to thin out the dressing

Salt, to taste

Instructions

Prepare the Falafel Mixture:

    - Drain the soaked chickpeas and place them in a food processor along with the chopped onion, minced garlic, parsley, cilantro, cumin, coriander, baking powder, salt, and pepper. Pulse the mixture until it’s well combined but still has some texture—be careful not to over-process into a paste.

      Shape the Falafel:

        - Using your hands, form the falafel mixture into small balls or patties, about 1.5 inches in diameter. Place them onto a baking sheet lined with parchment paper to keep them from sticking.

          Heat the Oil:

            - In a deep skillet or fryer, pour in about 2 inches of oil and heat over medium heat until it reaches 350°F (175°C). To check if the oil is ready, drop in a small piece of the falafel mixture; it should sizzle and rise to the surface.

              Fry the Falafel:

                - Carefully add the falafel balls to the hot oil in small batches to avoid overcrowding. Fry them for about 4-5 minutes, turning occasionally, until they achieve a golden brown color and are crispy on all sides. Remove the falafel with a slotted spoon and let them drain on paper towels.

                  Prepare the Salad:

                    - While the falafel is frying, prepare the salad. In a large mixing bowl, combine the mixed greens, diced cucumber, halved cherry tomatoes, diced red bell pepper, and thinly sliced red onion. Toss gently to mix all the ingredients evenly.

Make the Tahini Dressing (if making homemade):

                        - In a small bowl, whisk together tahini, lemon juice, olive oil, minced garlic, and a pinch of salt until smooth. Gradually add water, one tablespoon at a time, until you achieve your desired dressing consistency.

                          Assemble the Bowl:

                            - To serve, divide the salad mixture among individual bowls. Top each serving with a generous portion of crispy falafel, sprinkle with crumbled feta cheese if using, and drizzle generously with tahini dressing.

                              Serve and Enjoy:

                                - Serve immediately while the falafel are still hot and crispy. Enjoy your delightful and nutritious Crispy Falafel Salad Bowl!
