Crispy Chickpea & Feta Salad

4 cups mixed leafy greens (such as arugula, spinach, or your favorite blend)

1 cup cherry tomatoes, halved

1/2 cucumber, diced into small pieces

1/4 red onion, thinly sliced

1/2 cup crumbled feta cheese

1/4 cup kalamata olives, pitted and halved

2 tablespoons freshly squeezed lemon juice

1 tablespoon red wine vinegar

Fresh herbs (such as parsley or basil), for garnish

Preheat Oven: Begin by preheating your oven to 400°F (200°C) so it's hot and ready for roasting.
