1 medium onion, finely chopped

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 red bell pepper, diced

1 cup water chestnuts, diced

2 tablespoons soy sauce

1 tablespoon hoisin sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 teaspoon chili paste (optional for added heat)

Salt and pepper, to taste

1 head of butter lettuce or romaine lettuce, leaves carefully separated

Chopped green onions and sesame seeds, for garnish

Cook the Chicken: In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the ground chicken, ensuring to break it apart with a spatula as it cooks. Sauté until the chicken is fully browned and cooked through, about 5-7 minutes.

    Sauté Aromatics: Add the finely chopped onion, minced garlic, and grated ginger to the skillet with the chicken. Stir and sauté for 2-3 minutes, or until the onions become translucent and fragrant.

      Add Vegetables: Incorporate the diced red bell pepper and diced water chestnuts into the mixture. Continue cooking for an additional 2-3 minutes until the bell peppers begin to soften.
