To achieve that perfect crispy texture, proper coating of the chicken is essential. Start by preparing your chicken pieces by ensuring they are dry; pat them with paper towels to remove excess moisture. Moisture can hinder the crisping process, so this step is crucial.

Ingredients

4 boneless, skinless chicken thighs

1 cup buttermilk

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

4 slices of sourdough bread

1 cup shredded romaine lettuce

1/2 cup Caesar dressing

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

2 tablespoons olive oil

Freshly cracked black pepper, for garnish

Instructions

Marinate the Chicken: In a medium bowl, combine the buttermilk, garlic powder, onion powder, paprika, and a generous sprinkle of salt and pepper. Add the chicken thighs to the mixture, making sure each piece is thoroughly coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes. For enhanced flavor, marinate overnight.

Prepare the Coating: In a shallow dish or plate, combine the flour with a pinch of salt and pepper, mixing well to incorporate the seasonings evenly.

Bread the Chicken: Once marinated, remove the chicken thighs from the buttermilk, allowing any excess liquid to drip off. Dredge each thigh in the seasoned flour, pressing gently to ensure an even coating. Shake off any extra flour before frying.

Fry the Chicken: Heat the olive oil in a large skillet over medium-high heat. When the oil is shimmering, carefully add the breaded chicken thighs. Cook for approximately 6-7 minutes on each side, or until the chicken is golden brown and crispy. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C). Once cooked, transfer the chicken to a paper towel-lined plate to drain any excess oil.

Prepare the Sandwiches: Preheat your broiler on high. Arrange the sourdough slices on a baking sheet. Generously spread Caesar dressing across each slice of bread. Top with the crispy chicken, followed by a bed of shredded romaine lettuce. Sprinkle Parmesan cheese and then layer on the shredded mozzarella to create a cheesy topping.

Melt the Cheese: Place the baking sheet under the broiler for 2-3 minutes, watching closely to ensure the cheese melts and becomes bubbly and golden without burning.

Serve: Once melted, carefully remove the sandwiches from the oven. Garnish with freshly cracked black pepper. Slice each sandwich in half for easy handling and serve immediately, accompanied by extra Caesar dressing for dipping.
