1 red bell pepper, diced

2 cloves garlic, minced

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

1/2 teaspoon chili powder

Salt and freshly ground black pepper, to taste

1 cup shredded cheese (options: cheddar, Monterey Jack, or a vegan cheese alternative)

4 large flour tortillas

2 tablespoons olive oil (or your preferred cooking oil)

Fresh cilantro, roughly chopped, for garnish

Optional: sliced avocado, sour cream, or salsa for serving

Prepare the Filling: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the finely chopped red onion and sauté until it becomes translucent and softened, about 3-4 minutes. Next, stir in the diced red bell pepper and minced garlic, cooking together for an additional 2 minutes until the garlic is fragrant.

    Incorporate Beans and Corn: Add the drained black beans and corn to the skillet, then sprinkle in the ground cumin, smoked paprika, chili powder, and season generously with salt and pepper. Stir to combine all the ingredients and cook, stirring occasionally, for about 5-7 minutes or until the mixture is heated through and well blended.

      Assemble the Quesadillas: On a clean, flat surface, lay out two flour tortillas. Spread half of the black bean filling evenly over each tortilla, followed by an even distribution of 1/2 cup of shredded cheese on top.
