12 oz (340g) pasta (penne or rotini recommended)

2 medium zucchinis, sliced into half-moons

1 cup cherry tomatoes, halved

1 medium onion, diced

3 cloves garlic, minced

1 cup heavy cream

1 cup low-sodium vegetable broth

1 cup grated Parmesan cheese

1 tablespoon olive oil

1 teaspoon Italian seasoning

Salt and black pepper to taste

Fresh basil leaves for garnish

Cook the Pasta: In a large pot, bring a pot of salted water to a rolling boil. Add the pasta and cook according to the package instructions until al dente. Once cooked, drain the pasta and set aside, reserving ½ cup of the pasta cooking water to use later.

    Sauté the Vegetables: Heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté for approximately 3-4 minutes, or until the onion becomes translucent. Then, stir in the minced garlic and cook for another minute, allowing the garlic to release its fragrant aroma.

      Incorporate Zucchini and Tomatoes: Add the sliced zucchini and halved cherry tomatoes to the skillet. Stir well and allow to cook for another 5-6 minutes, or until the zucchini is tender and the tomatoes start to soften and burst.

        Create the Cream Sauce: Lower the heat to medium-low. Pour in the heavy cream and vegetable broth, stirring to combine. Add Italian seasoning, salt, and black pepper to taste. Let the mixture lightly simmer for 2-3 minutes to blend the flavors.

          Combine with Pasta: Carefully add the cooked pasta to the skillet, tossing gently to ensure the pasta is well-coated in the creamy sauce. If the sauce is too thick, gradually incorporate the reserved pasta water until the desired creamy consistency is achieved.
