Creamy Tomato Basil Gnocchi

1 lb (450g) potato gnocchi

2 tablespoons olive oil

3 cloves garlic, minced

1 can (14 oz) crushed tomatoes

1 cup heavy cream

1 teaspoon sugar (to balance acidity)

1 teaspoon dried basil

Salt and freshly ground black pepper, to taste

1 cup fresh basil leaves, chopped

1/2 cup grated Parmesan cheese, plus extra for serving

Crushed red pepper flakes (optional, for added heat)

Instructions
 

Cook the Gnocchi: Bring a large pot of salted water to boil. Once boiling, carefully add the gnocchi. Cook according to package instructions until they rise to the surface, which should take about 2-3 minutes. Once cooked, drain them and set aside.

    Sauté the Garlic: In a large skillet, warm the olive oil over medium heat. As the oil shimmers, add the minced garlic and sauté for about 1 minute, or until it becomes fragrant, taking care not to let it burn.

      Add Tomatoes and Cream: Pour in the crushed tomatoes and sprinkle in the sugar, dried basil, salt, and pepper. Stir the mixture thoroughly and allow it to simmer for about 5 minutes. Next, lower the heat and gradually whisk in the heavy cream, stirring continuously until the sauce is smooth and well combined.

        Combine Gnocchi and Sauce: Add the drained gnocchi to the skillet, gently folding them into the creamy tomato sauce. Stir to ensure all the gnocchi are evenly coated, and let it simmer for an additional 2-3 minutes for the flavors to meld.
