8 oz penne pasta

1 lb boneless, skinless chicken breasts, chopped into bite-sized pieces

1 tablespoon olive oil

1 medium onion, finely diced

1 red bell pepper, diced

1 green bell pepper, diced

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust according to spice preference)

1 cup corn kernels (fresh, frozen, or canned)

1 cup black beans, rinsed and drained

1 cup cherry tomatoes, halved

1 cup heavy cream

1/2 cup grated Parmesan cheese

Salt and pepper, to taste

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Cook the Pasta: Fill a large pot with salted water and bring it to a boil. Add the penne pasta and cook according to the package directions until al dente. Once cooked, drain and set the pasta aside.

    Sauté the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the bite-sized chicken pieces and season them generously with salt and pepper. Cook for about 5-7 minutes, or until the chicken is golden brown and thoroughly cooked. Once done, remove the chicken from the skillet and set it aside on a plate.

      Sauté the Vegetables: In the same skillet, add the diced onion and both bell peppers. Sauté for approximately 3-4 minutes, stirring occasionally, until the vegetables begin to soften. Then, add the minced garlic and cook for an additional minute, until it becomes fragrant.
