Ingredients

1 cup long-grain white rice

2 cups vegetable broth (or chicken broth for a non-vegetarian option)

2 cups fresh broccoli florets

1 cup shredded sharp cheddar cheese

1 cup heavy cream

1 tablespoon olive oil

3 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon garlic powder

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional, for heat)

Fresh parsley, chopped (for garnish)

Instructions

Cook the Rice:

In a medium saucepan, combine the long-grain white rice and vegetable broth (or chicken broth). Bring the mixture to a vigorous boil over high heat. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for approximately 15 minutes. The rice should absorb all the liquid and become tender. Once cooked, remove the saucepan from the heat and fluff the rice with a fork to separate the grains.

      Sauté the Broccoli:

While the rice is cooking, heat the olive oil in a large skillet over medium heat. Add the fresh broccoli florets to the skillet. Sauté for about 5 minutes, stirring occasionally, until the broccoli is vibrant in color and just tender but still crisp. Once ready, remove the broccoli from the skillet and set it aside on a plate.

          Make the Creamy Sauce:

In the same skillet used for the broccoli, add the minced garlic and sauté for about 1 minute until it becomes fragrant. Then, pour in the heavy cream and bring the mixture to a gentle simmer. Mix in the onion powder, garlic powder, salt, black pepper, and optional red pepper flakes. Allow the sauce to simmer for 3 to 4 minutes, stirring occasionally, until it thickens slightly.

              Combine Ingredients:

Lower the heat under the skillet and incorporate the cooked rice into the creamy sauce, ensuring that every grain is well-coated. Gradually sprinkle in the shredded sharp cheddar cheese, stirring consistently until it melts completely and the mixture becomes creamy.

                  Add Broccoli:

Gently fold the sautéed broccoli back into the skillet, mixing everything together until it's fully combined. Taste the mixture and adjust the seasoning, adding more salt or pepper, if desired.

                      Garnish and Serve:

Remove the skillet from the heat. Garnish the dish with freshly chopped parsley for a pop of color and freshness. Serve immediately as a delightful main course or as a hearty side dish alongside your favorite protein.
