1 head of garlic

12 oz (340 g) fettuccine or linguine pasta

1 cup heavy cream

1/2 cup freshly grated Parmesan cheese

2 tablespoons olive oil

1/2 teaspoon salt

1/4 teaspoon freshly cracked black pepper

1/4 teaspoon red pepper flakes (optional for a hint of heat)

Fresh parsley, finely chopped (for garnish)

Extra grated Parmesan for serving

Instructions
 

Roast the Garlic:

    - Preheat your oven to 400°F (200°C).

      - Take the head of garlic and slice off the top to expose the individual cloves. Drizzle the exposed cloves with a teaspoon of olive oil and wrap the garlic tightly in aluminum foil.

        - Place the wrapped garlic in the oven and roast for about 30-35 minutes, or until the cloves are soft, golden, and fragrant. Once done, let it cool for a few minutes before squeezing the roasted garlic out of the skins into a bowl; set aside.

          Cook the Pasta:

            - While the garlic roasts, bring a large pot of salted water to a boil. Add the pasta and cook as per the package instructions until al dente.

              - Remember to reserve about 1 cup of the starchy pasta cooking water before draining the pasta in a colander.

                Prepare the Cream Sauce:

                  - In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the roasted garlic, mashing it gently with a fork or spatula to break it up slightly. Sauté for 1-2 minutes until it becomes aromatic.

                    - Lower the heat and gradually pour in the heavy cream, stirring constantly to combine with the mashed garlic. Allow the mixture to come to a gentle simmer, cooking for 3-4 minutes until the sauce has thickened slightly.

                      Combine Pasta with Sauce:
