Creamy Mushroom and Spinach Pasta

8 oz (227g) spaghetti or fettuccine

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

8 oz (227g) cremini mushrooms, sliced

4 cups fresh spinach

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon dried Italian seasoning

Salt and freshly ground black pepper, to taste

Fresh parsley, chopped, for garnish

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the spaghetti or fettuccine and cook according to the package's instructions until al dente (firm to the bite). Before draining, reserve 1 cup of the starchy pasta water; then, drain the pasta and set it aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté, stirring occasionally, until it becomes translucent and tender, approximately 3-4 minutes. Add the minced garlic and sauté for an additional minute, allowing its fragrance to develop.

      Add the Mushrooms: Incorporate the sliced cremini mushrooms into the skillet. Cook them for about 5-7 minutes, stirring occasionally until they are well-browned and tender.

        Incorporate the Spinach: Once the mushrooms have cooked down, add the fresh spinach to the skillet. Stir frequently, and cook until the spinach is wilted and tender, which should take about 2-3 minutes.

          Make the Sauce: Lower the heat to a gentle simmer and pour in the heavy cream. Stir thoroughly to combine all ingredients. Gradually add the grated Parmesan cheese, dried Italian seasoning, and a pinch of salt and pepper. If the sauce is too thick for your liking, gradually mix in some of the reserved pasta water until you achieve your desired creamy consistency.
